Chicken Shish Tawook

Chicken shish tawook is a delightful and flavorful dish that originates from Middle Eastern cuisine. Succulent chicken pieces are marinated in a blend of aromatic spices, yogurt, lemon juice, and garlic, creating a harmonious medley of flavors.

The ingredient to marinate the chicken:



  • 1.5 pounds boneless, skinless chicken breasts, cut into cubes

  • 1/4 cup plain yogurt

  • 2 tablespoons olive oil

  • 3 tablespoons lemon juice

  • 4 cloves garlic, minced

  • Salt and pepper

  • 1 teaspoon ground paprika

  • 1/2 teaspoon ground turmic

  • 2 tablespoons Shish Tawook Spices

  • Serving size 4-6 people



Preparing the Sauce:

  • 1/2 cup tahini

  • 1/4 cup lemon juice

  • 2 cloves garlic, minced

  • 2 tablespoons olive oil

  • 1/4 teaspoon salt

  • Water (as needed for desired consistency)

To Serve:

  • Pita bread

  • Sliced tomatoes

  • Sliced cucumbers

Optional

  • Chopped parsley

  • Lemon wedges

Directions:

  • In a bowl, combine all the marinade ingredients: yogurt, olive oil, lemon juice, and all the spices. Mix well.

  • Add the chicken cubes to the marinade, ensuring each piece is coated thoroughly. Cover the bowl and let the chicken marinate in the refrigerator for at least 2 hours, or ideally overnight for more flavor.

  • Preheat your grill to medium-high heat.

  • Thread the marinated chicken pieces onto skewers, leaving a little space between each piece. Discard any excess marinade.

  • Place the skewers on the preheated grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and slightly charred on the edges.

  • While the chicken is grilling, prepare the sauce. In a small bowl, whisk together the tahini, lemon juice, minced garlic, olive oil, and salt. Add water gradually while whisking until the sauce reaches your desired consistency. It should be smooth and pourable.

  • Once the chicken is cooked, remove the skewers from the grill and let them rest for a few minutes.

  • Serve the Shish Tawook with warm pita bread. You can spread some of the tahini sauce on the bread and top it with sliced tomatoes, cucumbers, and chopped parsley. Add a squeeze of lemon juice for extra freshness.
